Instructions
- Preheat the oven to 350°F (175°C).
- In a medium-sized bowl, combine the oats, almond flour, melted coconut oil, 3 tablespoons of honey, cinnamon, vanilla extract, and salt. Mix well until everything is well incorporated and you have a crumbly mixture.
- Arrange the sliced apricots in a baking dish. Drizzle the apricots with a little extra honey for added sweetness.
- Evenly distribute the crumble topping over the apricots.
- Bake in the preheated oven for about 20 minutes, or until the crumble topping turns a golden brown and the apricots have softened.
- Allow the apricot crumble to cool slightly. This will help the flavors meld together.
- To serve, layer Greek yogurt and the apricot crumble mixture in serving bowls. Repeat the layers if desired.
- Finish with a dollop of Greek yogurt on top and a final sprinkle of crumble. Serve immediately and enjoy!
Tips
- For an extra crunch, you can add a handful of chopped nuts to the crumble mixture.
- You can also use other fruits like peaches or plums in place of apricots.
- If you prefer, you can replace Greek yogurt with a dairy-free alternative.
