Apricot Crumble Yogurt Parfait

Indulge in this splendid Apricot Crumble Yogurt Parfait, a symphony of flavors and textures that will make your taste buds sing. The creamy Greek yogurt establishes a perfect balance with the sweet, slightly tart apricots and the delightfully crunchy almond-oat crumble topping. This dessert, with its origins in the Mediterranean where apricots and Greek yogurt are a staple, is a healthful, delightful end to any meal or a refreshing snack.

Serves 4

Ingredients

Salt
1/4 teaspoon
Vanilla extract
1 teaspoon
Cinnamon
1/2 teaspoon
Coconut oil
3 tablespoons, melted
Almond flour
1/2 cup
Oats
1/2 cup
Honey
3 tablespoons, plus extra for drizzling
Apricots
8, pitted and sliced
Greek yogurt
2 cups

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium-sized bowl, combine the oats, almond flour, melted coconut oil, 3 tablespoons of honey, cinnamon, vanilla extract, and salt. Mix well until everything is well incorporated and you have a crumbly mixture.
  3. Arrange the sliced apricots in a baking dish. Drizzle the apricots with a little extra honey for added sweetness.
  4. Evenly distribute the crumble topping over the apricots.
  5. Bake in the preheated oven for about 20 minutes, or until the crumble topping turns a golden brown and the apricots have softened.
  6. Allow the apricot crumble to cool slightly. This will help the flavors meld together.
  7. To serve, layer Greek yogurt and the apricot crumble mixture in serving bowls. Repeat the layers if desired.
  8. Finish with a dollop of Greek yogurt on top and a final sprinkle of crumble. Serve immediately and enjoy!

Tips

  • 💡 For an extra crunch, you can add a handful of chopped nuts to the crumble mixture.
  • 💡 You can also use other fruits like peaches or plums in place of apricots.
  • 💡 If you prefer, you can replace Greek yogurt with a dairy-free alternative.
