Apricot Crumble Yogurt

This delicious apricot crumble yogurt is a perfect balance of creamy yogurt, sweet apricots, and crunchy crumble topping.

Ingredients

  • Salt (1/4 teaspoon)
  • Vanilla extract (1/2 teaspoon)
  • Cinnamon (1/2 teaspoon)
  • Coconut oil (2 tablespoons, melted)
  • Almond flour (1/4 cup)
  • Oats (1/2 cup)
  • Honey (2 tablespoons)
  • Apricots (4, sliced)
  • Greek yogurt (1 cup)

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together the oats, almond flour, melted coconut oil, honey, cinnamon, vanilla extract, and salt to make the crumble topping.
  3. Spread the sliced apricots in a baking dish and drizzle with honey.
  4. Sprinkle the crumble topping evenly over the apricots.
  5. Bake for 20 minutes, or until the crumble topping is golden brown and the apricots are soft.
  6. Allow to cool slightly.
  7. In serving bowls, layer the Greek yogurt and the apricot crumble mixture.
