Apricot Delight

- Fresh apricots
- 4 cups, pitted and chopped
- Sugar
- 1/2 cup
- Water
- 1/2 cup
- Lemon juice

- Heavy cream

- Vanilla extract

Instructions
- In a medium saucepan, combine the chopped apricots, sugar, and water. Bring to a boil over medium heat, stirring occasionally, then reduce the heat and simmer for 10-15 minutes until the apricots are soft and the sugar has dissolved.
- Remove the saucepan from heat and stir in the lemon juice. Allow the mixture to cool completely.
- In a separate mixing bowl, whip the heavy cream using an electric mixer on medium speed until soft peaks form. Stir in the vanilla extract until well combined.
- Gently fold the cooled apricot mixture into the whipped cream until fully incorporated, taking care not to deflate the whipped cream.
