Instructions
- In a medium saucepan, combine the chopped apricots, sugar, and water. Bring to a boil over medium heat, stirring occasionally, then reduce the heat and simmer for 10-15 minutes until the apricots are soft and the sugar has dissolved.
- Remove the saucepan from heat and stir in the lemon juice. Allow the mixture to cool completely.
- In a separate mixing bowl, whip the heavy cream using an electric mixer on medium speed until soft peaks form. Stir in the vanilla extract until well combined.
- Gently fold the cooled apricot mixture into the whipped cream until fully incorporated, taking care not to deflate the whipped cream.
- Spoon the Apricot Delight mixture into serving dishes or glasses and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
- For added flair, garnish with additional chopped apricots or a sprinkle of crushed pistachios before serving.
Tips
- For a twist, consider adding a splash of almond extract for a nutty flavor.
- If fresh apricots are unavailable, you can substitute with canned apricots, but reduce the sugar as they are often packed in syrup.
