Ingredients

Fresh apricots
2, halved for garnish
Ice cubes
enough to fill two glasses
Club soda
1.5 cups
Apricot syrup
4 tablespoons
Water
1 cup
Sugar
1 cup
Fresh apricots
1 cup, chopped

Instructions

  1. To make the apricot syrup, combine water, sugar, and chopped apricots in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer for about 15 minutes until the sugar has completely dissolved and the apricots are soft.
  2. Allow the syrup to cool, then strain it to remove the apricot pieces. This will yield about 1 cup of syrup.
  3. Fill two glasses with ice cubes.
  4. Pour 2 tablespoons of the homemade apricot syrup into each glass.
  5. Top up each glass with club soda, stirring gently to combine the syrup and soda.
  6. Garnish each glass with a fresh apricot half and serve immediately for a refreshing, fizzy, and wonderfully sweet treat.
