Apricot Italian Soda

Ingredients

- Enough to fill two glasses Ice cubes
- 1.5 cups Club soda
- 4 tablespoons Apricot syrup
- 1 cup Water
- 1 cup Sugar
- 1 cup, chopped Fresh apricots

Instructions
- To make the apricot syrup, combine water, sugar, and chopped apricots in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer for about 15 minutes until the sugar has completely dissolved and the apricots are soft.
- Allow the syrup to cool, then strain it to remove the apricot pieces. This will yield about 1 cup of syrup.
- Fill two glasses with ice cubes.
- Pour 2 tablespoons of the homemade apricot syrup into each glass.
- Top up each glass with club soda, stirring gently to combine the syrup and soda.
- Garnish each glass with a fresh apricot half and serve immediately for a refreshing, fizzy, and wonderfully sweet treat.
