Ingredients
- All-purpose flour
- 2 cups
- Granulated sugar
- 3/4 cup
- Baking powder

- Salt

- Unsalted butter
- 1/2 cup, melted
- Milk
- 1 cup
- Egg
- 1, large
- Vanilla extract
- 1 teaspoon
- Dried apricots
- 1 cup, chopped
- Apricot jam
- 1/2 cup, for topping
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; be careful not to overmix.
- Fold in the chopped dried apricots until evenly distributed within the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Drop a small dollop of apricot jam on top of each muffin and gently swirl it into the batter with a toothpick for a marbled effect.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
