Arctic Char Tartare

- 8 oz, skinless and boneless Arctic char
- 1, sliced into thin rounds Baguette
- 1 tablespoon Dijon mustard
- 1 tablespoon, rinsed and chopped Capers
- 2 tablespoons, finely chopped Chives
- 2 tablespoons Olive oil
- 1 tablespoon, freshly squeezed Lemon juice

Instructions
- Begin by ensuring your Arctic char is as fresh as possible. Cut the fish into small dice (about 1/4-inch pieces) and place them in a mixing bowl.
- Add the freshly squeezed lemon juice, olive oil, Dijon mustard, chopped capers, and finely chopped chives to the bowl with the diced Arctic char.
- Season the mixture with salt and pepper to taste. Gently fold all the ingredients together until well combined, being careful not to mush the fish.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This allows the flavors to meld beautifully and the fish to chill.
- While the tartare is chilling, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush them lightly with olive oil.
- Toast the baguette slices in the oven for about 5-7 minutes or until golden and crisp. Keep an eye on them to prevent burning.
- Once the tartare is ready, remove it from the refrigerator. Serve the Arctic char tartare on the toasted baguette slices. Garnish with additional chives if desired.
