Ingredients
- Fresh corn kernels (2 cups, roughly chopped)
- Cornmeal (1 cup)
- Shredded mozzarella cheese (1 cup)
- Sugar (1 tablespoon)
- Salt (1 teaspoon)
- Butter (2 tablespoons, melted)
- Vegetable oil (for frying)
Instructions
- In a blender or food processor, blend the fresh corn kernels until smooth, creating a creamy corn mixture.
- In a large mixing bowl, combine the blended corn, cornmeal, shredded mozzarella cheese, salt, sugar, and melted butter. Stir well until a moist dough forms.
- Divide the dough into 6 equal portions and shape each portion into a round patty, about 1/2 inch thick.
- Heat vegetable oil in a skillet over medium heat, ensuring there's enough oil to cover the bottom of the skillet.
- Carefully place the arepas in the hot skillet and cook for about 5 minutes on each side, or until they are golden brown and crispy on the outside.
- Once cooked, transfer the arepas to a paper towel-lined plate to absorb excess oil.
