Arepa de Choclo
Arepas de Choclo are delightful Colombian corn cakes that encapsulate the essence of South American cuisine. Made with fresh corn kernels, these arepas are crispy on the outside and soft and tender on the inside, making them the perfect vessel for a variety of fillings. Traditionally enjoyed as a snack or side dish, they evoke the warmth of Colombian kitchens and the vibrant culture surrounding them. Whether you fill them with savory shredded chicken, creamy avocado, or zesty black beans, they are sure to satisfy your cravings for something hearty yet light.
Ingredients
- Fresh corn kernels
- 2 cups, roughly chopped
- Cornmeal
- 1 cup
- Shredded mozzarella cheese
- 1 cup
- Sugar
- 1 tablespoon
- Salt
- 1 teaspoon
- Butter
- 2 tablespoons, melted
- Vegetable oil
- for frying
Instructions
- In a blender or food processor, blend the fresh corn kernels until smooth, creating a creamy corn mixture.
- In a large mixing bowl, combine the blended corn, cornmeal, shredded mozzarella cheese, salt, sugar, and melted butter. Stir well until a moist dough forms.
- Divide the dough into 6 equal portions and shape each portion into a round patty, about 1/2 inch thick.
- Heat vegetable oil in a skillet over medium heat, ensuring there's enough oil to cover the bottom of the skillet.
- Carefully place the arepas in the hot skillet and cook for about 5 minutes on each side, or until they are golden brown and crispy on the outside.
- Once cooked, transfer the arepas to a paper towel-lined plate to absorb excess oil.
- Serve the arepas warm and fill them with your favorite ingredients, such as shredded chicken, avocado slices, or black beans.
Tips
- For extra flavor, you can add chopped green onions or spices like cumin to the dough.
- Try experimenting with different cheeses, such as feta or queso blanco, to find your favorite combination.
- These arepas can also be grilled for a smoky flavor instead of frying.
