Argentine Asado with Grilled Portobello Mushrooms

- Chimichurri sauce
- 1 cup
- Portobello mushrooms
- 4 large, cleaned and stems removed
- Olive oil
- 1/4 cup, plus extra for brushing
- Garlic powder
- 1 teaspoon
- Black pepper
- 1 teaspoon, freshly cracked
- Salt
- 1 teaspoon
- Chorizo sausages
- 4 links
- Flank steak
- 1.5 pounds
- Beef short ribs
- 2 pounds
Instructions
- Prepare the grill for indirect grilling over medium heat.
- Season the beef short ribs and flank steak generously with salt, black pepper, and garlic powder, allowing them to marinate for at least 20 minutes.
- Place the seasoned meats on the grill, away from direct heat, and cook for about 30 minutes per side, or until they reach your desired doneness. Use a meat thermometer for precision.
- While the meats are grilling, brush the portobello mushrooms with olive oil and season with salt and black pepper.
- Grill the portobello mushrooms for about 5 minutes per side, or until they are tender and have nice grill marks.
- Remove the meats and mushrooms from the grill and let them rest for a few minutes to allow the juices to redistribute.
- Slice the meats against the grain and serve with the grilled portobello mushrooms and a generous drizzle of chimichurri sauce.
