Ingredients

Chimichurri sauce
1 cup
Portobello mushrooms
4 large, cleaned and stems removed
Olive oil
1/4 cup, plus extra for brushing
Garlic powder
1 teaspoon
Black pepper
1 teaspoon, freshly cracked
Salt
1 teaspoon
Chorizo sausages
4 links
Flank steak
1.5 pounds
Beef short ribs
2 pounds

Instructions

  1. Prepare the grill for indirect grilling over medium heat.
  2. Season the beef short ribs and flank steak generously with salt, black pepper, and garlic powder, allowing them to marinate for at least 20 minutes.
  3. Place the seasoned meats on the grill, away from direct heat, and cook for about 30 minutes per side, or until they reach your desired doneness. Use a meat thermometer for precision.
  4. While the meats are grilling, brush the portobello mushrooms with olive oil and season with salt and black pepper.
  5. Grill the portobello mushrooms for about 5 minutes per side, or until they are tender and have nice grill marks.
  6. Remove the meats and mushrooms from the grill and let them rest for a few minutes to allow the juices to redistribute.
  7. Slice the meats against the grain and serve with the grilled portobello mushrooms and a generous drizzle of chimichurri sauce.
