Ingredients

Beef ribs
2-3 pounds
Chimichurri sauce
1 cup
Potatoes
4 medium-sized, washed and sliced into thick rounds
Olive oil
1/4 cup, divided
Garlic powder
1 teaspoon
Paprika
1 teaspoon
Black pepper
1 teaspoon
Salt
1 teaspoon

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the garlic powder, paprika, black pepper, and salt. Season the beef ribs generously with this spice blend.
  3. Drizzle half of the olive oil over the seasoned ribs and rub the spices into the meat to ensure even coating.
  4. Place the ribs on the grill and cook for about 30-40 minutes per side, or until they reach your desired doneness. Baste with remaining olive oil occasionally to keep them moist.
  5. While the ribs are grilling, prepare the potatoes by brushing them with the remaining olive oil and seasoning with salt and pepper.
