Ingredients
- Chicken broth
- 1 cup
- Dry white wine
- 1/2 cup
- Black pepper
- 1/2 teaspoon, freshly ground
- Salt
- 1/2 teaspoon
- Extra virgin olive oil
- 2 tablespoons
- Thyme
- 2 tablespoons, freshly chopped
- Rosemary
- 2 tablespoons, freshly chopped
- Garlic
- 4 cloves, minced
- Pork roast
- 2 pounds
Instructions
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine minced garlic, freshly chopped rosemary and thyme, extra virgin olive oil, salt, and freshly ground black pepper. Mix until you have a well-blended paste.
- Rub this aromatic paste all over the pork roast so that it's evenly coated. Don't rush this step, take your time to infuse the meat with all the flavors.
- Place the seasoned pork roast in a roasting pan. Pour the dry white wine and chicken broth into the pan. This will not only keep the meat tender but also form the base of your delicious gravy.
- Cover the roasting pan with foil and place it in the preheated oven. Roast for 1 hour.
- After 1 hour, remove the foil and continue roasting for an additional 30 minutes, or until the internal temperature of the pork roast reaches 145°F (63°C). You can check this using a meat thermometer.
- Once done, remove the pork roast from the oven and let it rest for 10 minutes before slicing. This rest period allows the juices to redistribute throughout the roast, ensuring a moist and flavorful dish.
- Slice the pork roast and serve drizzled with the pan juices, which can be served as is or reduced on the stove into a thicker gravy. Enjoy this traditional Italian delicacy!
