Arroz Carreteiro (Brazilian Rice with Beef Jerky)
Arroz Carreteiro, also known as 'Cart Driver's Rice', is a robust and appetizing dish that hails from the southern regions of Brazil. Originally created by Brazilian cowboys, it has become a beloved dish nationwide, celebrated for its deep, hearty flavors. This dish is a wonderful medley of long grain rice and beef jerky, simmered with fresh vegetables and aromatic herbs. Ingredients
- Olive oil
- 2 tablespoons
- Beef jerky
- 500g, soaked in water for 2 hours
- Garlic
- 4 cloves, minced
- Onion
- 1 large, chopped
- Green bell pepper
- 1, diced
- Tomatoes
- 2 large, diced
- Long grain rice
- 2 cups
- Parsley
- 1/4 cup, chopped
- Salt
- to taste
- Black pepper
- to taste
Instructions
- Start by soaking the beef jerky in water for at least 2 hours to remove excess salt, then drain and set aside.
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent.
- Add the soaked and drained beef jerky to the pan. Cook it until it is well browned.
- Next, add the long grain rice to the pan, stirring well to combine it with the other ingredients.
- Add the diced bell pepper and tomatoes to the pan. Continue to cook the mixture, stirring occasionally, until the vegetables soften.
- Pour in enough water to fully cover the rice. Season the mixture with salt and pepper as per your taste. Cover the pan and let it simmer until the rice is fully cooked and all the water has been absorbed.
- Just before serving, stir in the chopped parsley. Enjoy your authentic Brazilian Arroz Carreteiro!
