Ingredients
- Coconut milk (2 cups)
- Water (1 cup)
- Medium grain rice (1 cup)
- Cinnamon sticks (2)
- Cloves (5)
- Salt (1/4 teaspoon)
- Sweetened condensed milk (1 can (14 ounces))
- Vanilla extract (1 teaspoon)
- Raisins (1/2 cup)
- Ground cinnamon (1/2 teaspoon, plus extra for sprinkling)
Instructions
- In a large saucepan, combine the coconut milk, water, rice, cinnamon sticks, cloves, and salt. Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low and let it simmer. Allow the rice to cook and absorb the liquid for about 30 minutes.
- Stir in the sweetened condensed milk, vanilla extract, raisins, and ground cinnamon. Continue cooking for an additional 10 minutes, or until the mixture thickens to your liking. Don't forget to stir occasionally to prevent the rice from sticking to the bottom of the pan.
- Remove the saucepan from heat. Take out the cinnamon sticks and cloves.
- Transfer the Arroz con Dulce to a serving dish. If desired, sprinkle with additional ground cinnamon to taste.
