Arroz Con Gandules

Arroz con Gandules is a traditional Puerto Rican rice dish made with pigeon peas, rice, and a flavorful sofrito.

Ingredients

  • Black pepper (1/2 teaspoon)
  • Salt (1 teaspoon)
  • Water (3 cups)
  • Long (grain white rice - 2 cups)
  • Pigeon peas (1 can (15 ounces), drained and rinsed)
  • Sazon seasoning (1 packet)
  • Tomato sauce (1/4 cup)
  • Sofrito (1/2 cup)
  • Cilantro (1/4 cup, chopped)
  • Green bell pepper (1, finely chopped)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, finely chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and green bell pepper. Cook until the vegetables are softened, about 5 minutes.
  3. Add the cilantro, sofrito, tomato sauce, and sazon seasoning. Stir to combine.
  4. Add the pigeon peas and cook for another 2 minutes.
  5. Add the rice, water, salt, and black pepper. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let the rice rest for 5 minutes before fluffing with a fork.
  8. Serve hot and enjoy!
