- 1 medium, finely chopped
- Corn kernels
- 1 cup, fresh or frozen
- Rice
- 1 cup, uncooked
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the finely chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, typically takes about 5 minutes.
- Add the uncooked rice and corn kernels into the pot. Stir well to ensure the rice and corn are well-coated with the flavorful onion and garlic mixture.
- Gradually pour in the chicken broth. Season the mixture with salt and freshly ground black pepper, then stir.
- Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and allow it to simmer. This should take about 20 minutes, or until the rice is fully cooked and all the liquid has been absorbed.
- After the rice is cooked, remove the pot from heat and let it stand, covered, for 5 minutes. This allows the rice to absorb any remaining liquid, resulting in a fluffy and moist texture.
- Finally, fluff the rice with a fork and sprinkle it with finely chopped cilantro. Serve the Arroz Con Maiz hot with lime wedges on the side for added tanginess.
