- 6 large
- Milk
- 1/2 cup
- Parmesan cheese
- 1/2 cup, grated
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Fresh parsley
- 2 tablespoons, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the sliced leeks and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and chopped artichoke hearts, cooking for an additional 2 minutes until fragrant.
- In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.
- Pour the egg mixture over the sautéed leeks and artichokes in the skillet, gently stirring to distribute evenly.
- Sprinkle the grated Parmesan cheese on top.
