
Arugula and Grilled Chicken Wrap
This delicious wrap is filled with fresh arugula, grilled chicken, and a tangy dressing.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 teaspoon)
- Lemon juice (1 tablespoon)
- Greek yogurt (2 tablespoons)
- Feta cheese (1/4 cup, crumbled)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Arugula (2 cups)
- Whole wheat tortillas (2)
- Grilled chicken breast (2 pieces)
Instructions
- In a small bowl, mix together Greek yogurt, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
- Spread the dressing evenly on each tortilla.
- Layer arugula, grilled chicken, cherry tomatoes, red onion, and feta cheese on top of the dressing.
- Roll up the tortillas tightly, tucking in the sides as you go.
- Slice the wraps in half and serve.
