Arugula and Grilled Chicken Wrap

This delicious wrap is filled with fresh arugula, grilled chicken, and a tangy dressing.

Ingredients

  • Salt and pepper (to taste)
  • Dijon mustard (1 teaspoon)
  • Lemon juice (1 tablespoon)
  • Greek yogurt (2 tablespoons)
  • Feta cheese (1/4 cup, crumbled)
  • Red onion (1/4 cup, thinly sliced)
  • Cherry tomatoes (1 cup, halved)
  • Arugula (2 cups)
  • Whole wheat tortillas (2)
  • Grilled chicken breast (2 pieces)

Instructions

  1. In a small bowl, mix together Greek yogurt, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
  2. Spread the dressing evenly on each tortilla.
  3. Layer arugula, grilled chicken, cherry tomatoes, red onion, and feta cheese on top of the dressing.
  4. Roll up the tortillas tightly, tucking in the sides as you go.
  5. Slice the wraps in half and serve.
