
Arugula and Grilled Halloumi Cheese Salad

Ingredients
- Salt and pepper (to taste)
- Olive oil (2 tablespoons)
- Lemon (1, juiced)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Halloumi cheese (8 oz, sliced)
- Arugula (4 cups)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Brush the halloumi cheese slices with olive oil and season with salt and pepper.
- Grill the halloumi cheese for 2-3 minutes per side, until grill marks appear.
- In a large bowl, combine the arugula, cherry tomatoes, and red onion.
