Grilled Peach and Burrata Salad with Arugula

Ingredients

  • Extra virgin olive oil (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)
  • Balsamic glaze (2 tablespoons)
  • Burrata cheese (8 ounces, torn into pieces)
  • Peaches (4, halved and pitted)
  • Arugula (6 cups, washed and dried)

Instructions

  1. Preheat your grill to medium-high heat, ensuring the grates are clean.
  2. Brush the cut side of each peach half with extra virgin olive oil, then season with salt and black pepper.
  3. Place the peaches, cut side down, on the grill. Grill for 2-3 minutes per side, or until you see beautiful grill marks and the peaches have softened slightly.
  4. Remove the peaches from the grill and allow them to cool for a few minutes.
  5. In a large salad bowl, add the fresh arugula, grilled peach halves, and torn burrata cheese.
  6. Drizzle the salad with balsamic glaze and a touch more extra virgin olive oil.
  7. Season with additional salt and pepper to taste.
  8. Gently toss the salad to combine all the ingredients, taking care not to break the burrata too much.
