Servings: 6

Ingredients

Green papaya
1 medium, julienned
Carrots
2, julienned
Red bell pepper
1, julienned
Onion
1 small, thinly sliced
Garlic
3 cloves, minced
Ginger
1-inch piece, grated
White vinegar
1 cup
Sugar
1/2 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Red chili pepper
1, thinly sliced (optional for spice)

Instructions

  1. In a large mixing bowl, combine the julienned green papaya, carrots, red bell pepper, sliced onion, minced garlic, and grated ginger. Toss the vegetables gently to ensure an even mix.
  2. In a small saucepan, combine the white vinegar, sugar, salt, and black pepper. Heat over medium heat while stirring continuously until the sugar and salt are fully dissolved. Remove from heat and allow the mixture to cool for a few minutes.
  3. Once cooled, pour the vinegar mixture over the prepared vegetables in the bowl. Toss everything together thoroughly to ensure all the vegetables are well-coated in the pickling solution.
  4. If you enjoy a bit of heat, add the thinly sliced red chili pepper and mix well to incorporate.
  5. Cover the bowl with plastic wrap or transfer the mixture to a clean glass jar. Allow it to marinate in the refrigerator for at least 20 minutes before serving; for optimal flavor, let it sit for several hours or overnight.
  6. Serve chilled as a zesty side dish or condiment alongside traditional Filipino dishes, such as lechon, grilled meats, or steamed rice.
