Traditional Mexican Atole
Atole, a comforting and velvety hot beverage, holds a special place in the heart of Mexican culinary tradition. - 1 teaspoon Vanilla extract
- 1 stick (or 1 teaspoon of ground cinnamon) Cinnamon
- 1/2 cup (adjust to taste) Sugar
- 4 cups Milk
- 1 cup Masa harina

Instructions
- In a large saucepan, whisk together the masa harina and 1 cup of milk until there are no lumps and the mixture is well combined.
- Add the rest of the milk, cinnamon, sugar, and vanilla extract to the saucepan.
- Place the saucepan over a medium heat. Stir the mixture constantly to prevent it from sticking to the bottom of the pan. Continue until the mixture thickens and starts to simmer.
- Once the mixture is simmering, reduce the heat to low and let it cook for another 5 minutes, stirring occasionally to keep it smooth.
- Turn off the heat and let the Atole cool down slightly. It will continue to thicken as it cools.
- Pour the Atole into mugs or cups. If you used a cinnamon stick, remove it before serving. Sprinkle the top of each serving with a pinch of ground cinnamon for a fancy touch.
- Serve the Atole while it's still hot. Enjoy this classic Mexican comfort beverage!
Tips
- You can customize your Atole by adding other flavors such as chocolate (to make 'Champurrado') or fruit purees.
- If the Atole becomes too thick as it cools, simply reheat it with a little more milk.
