Imagine biting into perfectly toasted bread, its buttery exterior giving way to a melty, rich brie that envelops crisp, salty bacon. Grilled cheese sandwiches have been a cherished American favorite since the early 20th century, and this recipe takes that beloved tradition to a whole new level with its decadent flavors and textures. Perfect for cozy gatherings or a solo treat, this sandwich is sure to impress anyone who takes a bite.

Serves 2

Ingredients

Unsalted butter
4 tablespoons, softened
Bread
4 slices (preferably sourdough or artisan bread)
Brie cheese
6 ounces, sliced
Bacon
6 slices
Fresh thyme (optional)
1 teaspoon, chopped (for added flavor)

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. On the unbuttered side of two slices, layer the brie cheese slices evenly.
  4. Top the brie with crispy bacon slices and sprinkle with fresh thyme if using.
  5. Cover with the remaining bread slices, ensuring the buttered side is facing up.
  6. Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet.
  7. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. You may need to lower the heat to prevent burning the bread while the cheese melts.
  8. Remove from the skillet and let cool for a few minutes before cutting in half.
  9. Serve warm and enjoy the delectable combination of flavors!

Tips

  • 💡 For an extra layer of flavor, consider adding a spread of fig jam or apple chutney on the inside of the bread before adding the cheese and bacon.
  • 💡 Experiment with different types of cheese, such as gouda or cheddar, for a unique twist.
  • 💡 Pair your grilled cheese with a side of tomato soup for a classic combination!
