Bacon and Cheese Stuffed Chicken

Ingredients
- Olive oil
- 2 tablespoons
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
- Paprika
- 1 teaspoon
- Garlic powder
- 1 teaspoon
- Cheddar cheese
- 1 cup, shredded
- Bacon
- 8 slices
- Chicken breasts
- 4, boneless and skinless
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully cut a slit into the side of each chicken breast to create a pocket, making sure not to cut all the way through.
- Season the inside of the chicken breasts with garlic powder, paprika, salt, and pepper.
- Stuff each chicken breast with 2 slices of bacon and a quarter cup of shredded cheddar cheese.
- Secure the opening of the chicken breasts with toothpicks to keep the stuffing inside while cooking.
- Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts.
- Cook the chicken breasts for 3-4 minutes on each side, until they're browned. This will give them a nice crust and add flavor.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Cooking time may vary depending on the size of the chicken breasts.
- Remove the skillet from the oven and let the chicken rest for a few minutes before removing the toothpicks.
- Serve the bacon and cheese stuffed chicken hot, with a side of steamed vegetables or a fresh salad for a complete meal.
