Ingredients

  • Olive oil (2 tablespoons)
  • Salt (1/2 teaspoon, or to taste)
  • Black pepper (1/2 teaspoon, or to taste)
  • Paprika (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Cheddar cheese (1 cup, shredded)
  • Bacon (8 slices)
  • Chicken breasts (4, boneless and skinless)

Instructions

  2. Using a sharp knife, carefully cut a slit into the side of each chicken breast to create a pocket, making sure not to cut all the way through.
  3. Season the inside of the chicken breasts with garlic powder, paprika, salt, and pepper.
  4. Stuff each chicken breast with 2 slices of bacon and a quarter cup of shredded cheddar cheese.
  5. Secure the opening of the chicken breasts with toothpicks to keep the stuffing inside while cooking.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts.
  7. Cook the chicken breasts for 3-4 minutes on each side, until they're browned. This will give them a nice crust and add flavor.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Cooking time may vary depending on the size of the chicken breasts.
