Serves 6

Ingredients

Fresh parsley
1/4 cup, chopped (for garnish)
BBQ sauce
1/2 cup (for brushing)
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Garlic powder
1 teaspoon
Egg
1, large
Breadcrumbs
1 cup
Cheddar cheese
1 cup, cubed
Bacon
6 strips, cooked and crumbled
Ground beef
1 pound

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, crumbled bacon, cubed cheddar cheese, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix thoroughly until everything is well incorporated.
  3. Take a small portion of the meat mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of cheddar cheese in the center, then wrap the meat around it, forming a meatball. Make sure the cheese is fully enclosed. Repeat this process until all the meat mixture is used.
  4. Line a baking sheet with parchment paper and arrange the meatballs on it, leaving some space between each one.
  5. Brush the tops of the meatballs generously with BBQ sauce to enhance their flavor and give them a beautiful glaze.
  6. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and the cheese is melted and bubbly.
  7. Once baked, remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.

Tips

  • 💡 For a spicy kick, consider adding some diced jalapeños or red pepper flakes to the meat mixture.
  • 💡 You can substitute ground turkey or chicken for a lighter version, adjusting the cooking time as needed.
  • 💡 Serve these meatballs with additional BBQ sauce on the side for dipping.
