
Bacon and Egg Breakfast Skillet
This hearty breakfast skillet is packed with crispy bacon, eggs, and potatoes for a delicious start to your day.
Ingredients
- Green onions (2 tablespoons, chopped)
- Cheddar cheese (1/2 cup, shredded)
- Salt and pepper (to taste)
- Eggs (4)
- Bell pepper (1, diced)
- Onion (1 small, diced)
- Potatoes (2 medium, diced)
- Bacon (4 slices, chopped)
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook until golden brown and crispy, about 10 minutes.
- Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Push the potato mixture to one side of the skillet and crack the eggs into the empty space. Season with salt and pepper.
- Cook the eggs to your desired doneness, either sunny-side up or scrambled.
- Sprinkle the cooked bacon, shredded cheddar cheese, and chopped green onions over the skillet.
- Cover the skillet with a lid or aluminum foil and cook for an additional 2-3 minutes, or until the cheese is melted.
