Bacon and Egg Breakfast Tacos

Ingredients
- Bacon
- 6 slices
- Eggs
- 4 large
- Salt
- to taste
- Black pepper

- Cheddar cheese
- 1 cup, shredded
- Avocado
- 1, sliced
- Tomato
- 1, diced
- Cilantro
- 1/4 cup, chopped
- Tortillas
- 4 small (corn or flour)
- Hot sauce
- optional, for serving
Instructions
- In a skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon from the skillet and drain on paper towels. Reserve a tablespoon of bacon grease in the skillet.
- In the same skillet with the reserved bacon grease, crack the eggs and scramble them over medium-low heat until cooked through, about 3-4 minutes. Season with salt and pepper to taste.
- While the eggs are cooking, warm the tortillas in a separate skillet or directly over a low flame until pliable, about 30 seconds on each side.
- To assemble the tacos, divide the scrambled eggs and crispy bacon among the warm tortillas.
- Top each taco with shredded cheddar cheese, sliced avocado, diced tomato, and chopped cilantro.
- For an extra kick, drizzle with your favorite hot sauce.
- Fold the tortillas in half to form tacos, serve immediately, and enjoy your delicious breakfast!
