Ingredients

Bacon
6 slices
Eggs
4 large
Salt
to taste
Black pepper
to taste
Cheddar cheese
1 cup, shredded
Avocado
1, sliced
Tomato
1, diced
Cilantro
1/4 cup, chopped
Tortillas
4 small (corn or flour)
Hot sauce
optional, for serving

Instructions

  1. In a skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon from the skillet and drain on paper towels. Reserve a tablespoon of bacon grease in the skillet.
  2. In the same skillet with the reserved bacon grease, crack the eggs and scramble them over medium-low heat until cooked through, about 3-4 minutes. Season with salt and pepper to taste.
  3. While the eggs are cooking, warm the tortillas in a separate skillet or directly over a low flame until pliable, about 30 seconds on each side.
  4. To assemble the tacos, divide the scrambled eggs and crispy bacon among the warm tortillas.
  5. Top each taco with shredded cheddar cheese, sliced avocado, diced tomato, and chopped cilantro.
  6. For an extra kick, drizzle with your favorite hot sauce.
  7. Fold the tortillas in half to form tacos, serve immediately, and enjoy your delicious breakfast!
