Bread
4 slices, your choice (white, whole grain, or sourdough)
Tomato
1 large, sliced
Lettuce
4 leaves, romaine or iceberg
Salt
to taste
Black pepper
to taste
Green onions
2, chopped
Dijon mustard
1 tablespoon
Mayonnaise
1/4 cup
Eggs
4, hard-boiled and chopped
Bacon
6 slices, cooked and crumbled

Instructions

  1. In a medium bowl, combine the chopped hard-boiled eggs, crumbled bacon, mayonnaise, Dijon mustard, chopped green onions, salt, and black pepper. Mix until well incorporated and creamy.
  2. Toast the bread slices in a toaster or on a skillet until they are golden brown and crispy.
  3. On two slices of toasted bread, place a leaf of lettuce to create a fresh base.
  4. Spoon the bacon and egg salad mixture evenly over the lettuce on each slice.
  5. Top with several slices of fresh tomato for a burst of flavor and color.
  6. Cover the sandwiches with the remaining slices of toasted bread.
  7. Cut each sandwich in half diagonally and serve immediately, with additional salt and pepper on the side if desired.
