Ingredients

  • Bread (4 slices)
  • Tomato (1, sliced)
  • Lettuce (4 leaves)
  • Salt and pepper (to taste)
  • Green onions (2, finely chopped)
  • Dijon mustard (1 tablespoon)
  • Mayonnaise (3 tablespoons)
  • Eggs (4, hard-boiled and chopped)
  • Bacon (6 slices, cooked)

Instructions

  1. In a bowl, combine the chopped bacon, eggs, mayonnaise, Dijon mustard, green onions, salt, and pepper. Mix well.
  2. Toast the bread slices until golden brown.
  3. Place a lettuce leaf on two slices of bread.
  4. Divide the bacon and egg salad mixture evenly between the two slices of bread.
