
Bacon and Feta Stuffed Chicken
This bacon and feta stuffed chicken is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a special occasion.
Ingredients
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Garlic powder (1 teaspoon)
- Feta cheese (1/2 cup, crumbled)
- Bacon (8 slices)
- Boneless, skinless chicken breasts (4)
Instructions
- Preheat the oven to 375°F.
- Lay the chicken breasts flat on a cutting board and use a sharp knife to cut a pocket into the side of each breast.
- In a small bowl, mix together the feta cheese, garlic powder, paprika, salt, and pepper.
- Stuff each chicken breast with the feta cheese mixture and use toothpicks to secure the opening.
- Wrap each chicken breast with 2 slices of bacon, tucking the ends of the bacon underneath the chicken.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until the bacon is crispy.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the bacon is crispy.
- Remove the toothpicks from the chicken and serve hot.
