Instructions
- In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside, leaving the rendered grease in the skillet.
- Add the finely chopped onion to the skillet and sauté until soft and translucent, about 5 minutes.
- In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt, stirring well to incorporate.
- In another bowl, whisk together the beaten egg and buttermilk. Stir in the crumbled bacon and sautéed onion.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
- In a deep fryer or a large pot, heat vegetable oil to 375°F (190°C).
- Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry in batches until golden brown, approximately 2-3 minutes on each side.
- Remove the hushpuppies with a slotted spoon and drain on paper towels.
- Serve warm with honey, hot sauce, or your favorite dipping sauce.
Tips
- For a spicier kick, add diced jalapeños or a dash of cayenne pepper to the batter.
- You can substitute green onions for a milder onion flavor.
- Experiment with different types of bacon, such as smoked or maple-flavored, to customize the taste.
