Servings: 2

Ingredients

  • Eggs (4 large)
  • Milk (2 tablespoons)
  • Salt (1/4 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Bacon (4 strips, diced)
  • Onion (1 medium, thinly sliced)
  • Cheddar cheese (1/2 cup, shredded)
  • Fresh parsley (2 tablespoons, chopped (for garnish))

Instructions

  1. In a non-stick skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and crumble into small pieces. Leave the bacon drippings in the skillet for added flavor.
  2. In the same skillet, add the sliced onion and sauté until golden and caramelized, about 8-10 minutes. Remove from the skillet and set aside.
  3. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.
  4. Heat the skillet over medium heat and pour in the egg mixture, swirling to coat the bottom evenly.
  5. Cook the eggs for 2-3 minutes until they begin to set around the edges, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
  6. Once the eggs are mostly set, sprinkle the crumbled bacon, caramelized onions, and shredded cheddar cheese evenly over one half of the omelette.
  7. Using a spatula, carefully fold the other half of the omelette over the filling. Allow it to cook for another minute or until the cheese is melted and the omelette is cooked through.
  8. Garnish with fresh parsley and serve hot with a side of toast or a light salad for a complete meal.
