Instructions
- In a non-stick skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and crumble into small pieces. Leave the bacon drippings in the skillet for added flavor.
- In the same skillet, add the sliced onion and sauté until golden and caramelized, about 8-10 minutes. Remove from the skillet and set aside.
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.
- Heat the skillet over medium heat and pour in the egg mixture, swirling to coat the bottom evenly.
- Cook the eggs for 2-3 minutes until they begin to set around the edges, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
- Once the eggs are mostly set, sprinkle the crumbled bacon, caramelized onions, and shredded cheddar cheese evenly over one half of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the filling. Allow it to cook for another minute or until the cheese is melted and the omelette is cooked through.
- Garnish with fresh parsley and serve hot with a side of toast or a light salad for a complete meal.
Tips
- For added flavor, consider using a mix of different cheeses such as Swiss or goat cheese.
- Feel free to add additional vegetables like bell peppers or spinach for extra nutrition.
- To make it spicier, add a pinch of red pepper flakes or some diced jalapeños.
