
Bacon and Ranch Potato Salad
This creamy and flavorful potato salad is loaded with crispy bacon and tangy ranch dressing.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 tablespoon)
- Ranch dressing (1/4 cup)
- Sour cream (1/2 cup)
- Mayonnaise (1/2 cup)
- Green onions (4, thinly sliced)
- Bacon (8 slices, cooked and crumbled)
- Potatoes (2 pounds, peeled and diced)
Instructions
- Boil the diced potatoes in a large pot of salted water until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, combine the cooled potatoes, crumbled bacon, and sliced green onions.
- In a separate bowl, whisk together the mayonnaise, sour cream, ranch dressing, Dijon mustard, salt, and pepper.
- Pour the dressing over the potato mixture and gently toss until well coated.
- Refrigerate for at least 1 hour to allow the flavors to meld together.
