Ingredients

Fresh parsley
2 tablespoons, finely chopped
Cayenne pepper
1/4 teaspoon
Paprika
1/2 teaspoon
Salt
1/2 teaspoon (or to taste)
Black pepper
1/4 teaspoon (or to taste)
Bell pepper
1 large, diced
Garlic
2 cloves, minced
Onion
1 medium, diced
Sweet potatoes
2 large, peeled and diced
Bacon
6 slices, chopped

Instructions

  1. Heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Using a slotted spoon, remove the bacon and set aside on a paper towel-lined plate.
  2. In the same skillet with the bacon fat, add the diced sweet potatoes. Cook, stirring occasionally, for about 5 minutes, until they start to soften.
  3. Add the diced onion, minced garlic, and diced bell pepper to the skillet. Continue to cook for another 5 minutes, until the vegetables are tender.
  4. Season the mixture with salt, black pepper, paprika, and cayenne pepper. Stir well to combine all the flavors.
  5. Continue cooking for another 5-7 minutes, until the sweet potatoes are cooked through and slightly crispy.
  6. Return the cooked bacon to the skillet and stir in the chopped fresh parsley. Cook for an additional 2 minutes to heat through.
