Bacon and Tomato Grilled Cheese

Ingredients

Unsalted butter
4 tablespoons, softened
Sourdough or whole wheat bread
4 slices
Sharp cheddar cheese
4 slices (or more, to taste)
Tomato
1 large, sliced
Bacon
4 slices
Black pepper
to taste
Garlic powder
1/2 teaspoon (optional)

Instructions

  1. In a skillet over medium heat, cook the bacon until it becomes crispy, about 6-8 minutes. Remove from the skillet and drain on paper towels.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. On a clean surface, place two slices of bread buttered side down.
  4. Layer each slice with 2 slices of sharp cheddar cheese, followed by 2 slices of crispy bacon, and then a few slices of fresh tomato. Season with a sprinkle of black pepper and garlic powder if desired.
  5. Top with the remaining slices of bread, buttered side up.
  6. Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  7. Remove from the skillet and allow to cool for a few minutes before slicing in half and serving warm.
