Ingredients

Bacon
8 slices, chopped
Ground beef
1 pound
Onion
1 medium, diced
Garlic
3 cloves, minced
Potatoes
3 medium, peeled and diced
Chicken broth
4 cups
Milk
1 cup
Cheddar cheese
2 cups, shredded
Salt
to taste
Pepper
to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the grease in the pot.
  2. Add the ground beef to the pot and cook until browned. Remove the beef and set aside.
  3. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant, about 3-4 minutes.
  4. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, approximately 15-20 minutes.
  5. Return the cooked bacon and beef to the pot, stirring to combine.
  6. Gradually stir in the shredded cheddar cheese until melted and creamy, followed by the milk. Season the soup with salt and pepper to taste.
  7. Serve the soup hot, garnished with extra bacon, cheese, and fresh herbs if desired.
