Ingredients

Almonds
1 cup, soaked and peeled
Sugar
1 cup
Water
1/2 cup
Cardamom powder
1 teaspoon
Ghee
2 tablespoons (for greasing the tray)
Silver leaf
as needed (for garnish)

Instructions

  1. Begin by soaking the almonds in water for at least 6 hours or overnight. Once soaked, peel the almonds and grind them into a fine paste, adding a little water if necessary to achieve a smooth consistency.
  2. In a heavy-bottomed pan, combine the sugar and water. Heat the mixture over medium heat, stirring until the sugar fully dissolves.
  3. Once the sugar has dissolved, reduce the heat to low and add the almond paste to the sugar syrup. Stir continuously to combine and cook for about 10-15 minutes, or until the mixture thickens and starts to pull away from the sides of the pan.
  4. Add the cardamom powder to the thickened almond mixture and mix well, allowing the flavors to meld together for another minute.
  5. Grease a flat tray or plate with ghee, ensuring an even coating to prevent sticking. Pour the almond mixture onto the tray and spread it evenly using a spatula, smoothing the surface.
  6. Allow the mixture to cool at room temperature for about 1-2 hours until it firms up. Once set, cut into desired shapes, such as squares or diamonds.
  7. If using, carefully apply silver leaf on top of the pieces for an elegant touch. Badam Ki Jaali is now ready to serve and impress your guests!
