Badam Ki Jaali
Badam Ki Jaali is a delightful traditional dessert from Hyderabad, celebrated for its rich flavor and intricate design. Ingredients
- Almonds
- 1 cup, soaked and peeled
- Sugar
- 1 cup
- Water
- 1/2 cup
- Cardamom powder
- 1 teaspoon
- Ghee
- 2 tablespoons (for greasing the tray)
- Silver leaf
- as needed (for garnish)
Instructions
- Begin by soaking the almonds in water for at least 6 hours or overnight. Once soaked, peel the almonds and grind them into a fine paste, adding a little water if necessary to achieve a smooth consistency.
- In a heavy-bottomed pan, combine the sugar and water. Heat the mixture over medium heat, stirring until the sugar fully dissolves.
- Once the sugar has dissolved, reduce the heat to low and add the almond paste to the sugar syrup. Stir continuously to combine and cook for about 10-15 minutes, or until the mixture thickens and starts to pull away from the sides of the pan.
- Add the cardamom powder to the thickened almond mixture and mix well, allowing the flavors to meld together for another minute.
- Grease a flat tray or plate with ghee, ensuring an even coating to prevent sticking. Pour the almond mixture onto the tray and spread it evenly using a spatula, smoothing the surface.
- Allow the mixture to cool at room temperature for about 1-2 hours until it firms up. Once set, cut into desired shapes, such as squares or diamonds.
- If using, carefully apply silver leaf on top of the pieces for an elegant touch. Badam Ki Jaali is now ready to serve and impress your guests!
