Instructions
- Bring a pot of water to a boil. Add the shrimp and cook until they turn pink, about 2-3 minutes. Drain and let cool.
- While the shrimp cools, in a large bowl, combine the tomato sauce, cucumber, red onion, jalapeno, avocado, cilantro, and lime juice. Mix well to ensure everything is evenly distributed.
- Add the cooled shrimp to the bowl. Stir well to combine, ensuring the shrimp are fully coated in the sauce.
- Season with salt and pepper according to your taste preference.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour before serving. This allows the flavors to meld together for a more intense taste.
- Serve the Baja Shrimp Cocktail chilled, with tortilla chips or saltine crackers on the side for dipping.
Tips
- For a spicy kick, leave some seeds in the jalapeno. Also, consider adding diced tomatoes for extra freshness. For a more indulgent version, add a splash of tequila to the mix before chilling.
