Ingredients

Salt and pepper

Lime juice
2 tablespoons, freshly squeezed
Cilantro
1/2 cup, chopped
Avocado
1, peeled, pitted, and diced
Jalapeno
1, seeds removed, finely chopped
Red onion
1/2 cup, finely chopped
Cucumber
1 cup, peeled, seeded, and diced
Tomato sauce
1 cup
Shrimp
1 lb, peeled and deveined

Instructions

  1. Bring a pot of water to a boil. Add the shrimp and cook until they turn pink, about 2-3 minutes. Drain and let cool.
  2. While the shrimp cools, in a large bowl, combine the tomato sauce, cucumber, red onion, jalapeno, avocado, cilantro, and lime juice. Mix well to ensure everything is evenly distributed.
  3. Add the cooled shrimp to the bowl. Stir well to combine, ensuring the shrimp are fully coated in the sauce.
  4. Season with salt and pepper according to your taste preference.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour before serving. This allows the flavors to meld together for a more intense taste.
