Crispy Baked Potato Skins with Eggs

Ingredients

Large russet potatoes

Shredded cheddar cheese

Chopped fresh chives

Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce each russet potato several times with a fork. Place them directly on the oven rack and bake for 45 minutes, or until they are tender when pierced with a fork.
  3. Once baked, remove the potatoes from the oven and allow them to cool for a few minutes. Carefully cut each potato in half lengthwise and scoop out the flesh, leaving about a 1/4-inch-thick shell.
  4. Brush the insides of the potato skins with olive oil, and season with salt and pepper. Place the skins cut side up on a baking sheet and bake for an additional 10 minutes, or until they are crisp and golden.
  5. Remove the baking sheet from the oven and crack an egg into each potato skin. Sprinkle a generous amount of shredded cheddar cheese over the eggs.
  6. Return the baking sheet to the oven and bake for another 15 minutes, or until the eggs are set to your liking.
  7. Once out of the oven, sprinkle the potato skins with chopped chives before serving.
