Ingredients

Ramen noodles
2 packs
Vegetable oil
2 tablespoons
Onion
1, chopped
Garlic
3 cloves, minced
Carrot
1, sliced
Bell pepper
1, sliced
Mushrooms
1 cup, sliced
Chicken broth
2 cups
Soy sauce
2 tablespoons
Sesame oil
1 tablespoon
Cornstarch
1 tablespoon
Water
1/4 cup
Breadcrumbs
1 cup
Parmesan cheese
1/2 cup, grated
Green onions
2, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ramen noodles according to package instructions, drain, and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, sliced carrot, bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5 minutes.
  4. In a small bowl, whisk together the soy sauce, sesame oil, chicken broth, cornstarch, and water until smooth. Pour this mixture into the skillet with the sautéed vegetables and cook, stirring frequently, until the sauce thickens, about 2 minutes.
  5. Add the cooked ramen noodles to the skillet, tossing to ensure they are well-coated in the sauce and mixed with the vegetables.
  6. Transfer the ramen mixture to a greased baking dish (approximately 9x13 inches).
  7. In a separate bowl, combine the breadcrumbs and grated Parmesan cheese. Sprinkle this breadcrumb mixture evenly over the top of the ramen.
  8. Bake in the preheated oven for 15 minutes, or until the breadcrumbs are golden brown and crispy.
  9. Remove from the oven and garnish with chopped green onions before serving.
