Banana Caramel Cheesecake

- 1 1/2 cups Graham cracker crumbs
- 1/2 cup, melted Unsalted butter
- 16 oz, softened Cream cheese
- 1 cup Granulated sugar
- 1/2 cup Sour cream
- 1 teaspoon Vanilla extract
- 2, mashed Ripe bananas
- 1/2 cup, plus extra for drizzling Caramel sauce
- 1 cup, for topping Whipped cream
- 1-2, for garnish Banana slices

Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
- In another mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.
- Add the sour cream, vanilla extract, and mashed bananas to the cream cheese mixture. Mix until fully incorporated and creamy.
- Pour the cream cheese mixture over the prepared crust in the springform pan. Use a spatula to smooth the top evenly.
- Bake in the preheated oven for 50-60 minutes, or until the cheesecake is set and slightly golden on top. The center should still have a slight jiggle.
- Remove the cheesecake from the oven and allow it to cool to room temperature. Then, refrigerate for at least 4 hours, or preferably overnight, to allow it to set completely.
- Before serving, drizzle additional caramel sauce over the top of the cheesecake. Garnish with whipped cream and banana slices for a beautiful presentation.
