- Bread
- 8 slices, preferably day-old or brioche
- Ripe bananas
- 3, sliced
- Milk
- 2 cups, whole or almond milk
- Eggs
- 4 large
- Vanilla extract
- 1 teaspoon
- Cinnamon
- 1 teaspoon
- Brown sugar
- 1/4 cup
- Unsalted butter
- 2 tablespoons, melted
- Maple syrup

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
- Arrange half of the bread slices in a single layer in the prepared baking dish.
- Layer half of the sliced bananas evenly over the bread.
- In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and brown sugar until well combined.
- Pour half of the egg mixture evenly over the bread and bananas in the baking dish, ensuring all the bread is soaked.
- Repeat the layering process with the remaining bread, bananas, and the remaining egg mixture.
- Drizzle the melted butter over the top of the casserole to add richness.
- Cover the baking dish with foil and let it sit for 15-20 minutes to allow the bread to absorb the custard mixture.
- Bake the casserole in the preheated oven for 30 minutes covered, then remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the custard is set.
