Servings: 4

Ingredients

Ripe bananas
2 large, mashed
All-purpose flour
1 cup
Baking powder
1 teaspoon
Granulated sugar
2 tablespoons
Salt
1/4 teaspoon
Milk
1/2 cup
Vanilla extract
1 teaspoon
Vegetable oil
for frying
Powdered sugar
for dusting

Instructions

  1. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until combined.
  3. Add the milk and vanilla extract to the mashed bananas, mixing well until fully incorporated.
  4. Gradually fold the dry ingredients into the banana mixture until well combined, being careful not to overmix.
  5. Heat vegetable oil in a deep pan or skillet over medium heat until it reaches 350°F (175°C).
  6. Drop spoonfuls of the banana batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on both sides, about 2-3 minutes per side.
  7. Remove the fritters from the oil using a slotted spoon and drain on a paper towel-lined plate.
  8. Dust the warm fritters with powdered sugar before serving. Enjoy them fresh out of the oil for the best flavor!
