Ingredients
- Ripe bananas
- 2 large, mashed
- All-purpose flour
- 1 cup
- Baking powder
- 1 teaspoon
- Granulated sugar
- 2 tablespoons
- Salt
- 1/4 teaspoon
- Milk
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Vegetable oil
- for frying
- Powdered sugar
- for dusting
Instructions
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until combined.
- Add the milk and vanilla extract to the mashed bananas, mixing well until fully incorporated.
- Gradually fold the dry ingredients into the banana mixture until well combined, being careful not to overmix.
- Heat vegetable oil in a deep pan or skillet over medium heat until it reaches 350°F (175°C).
- Drop spoonfuls of the banana batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove the fritters from the oil using a slotted spoon and drain on a paper towel-lined plate.
