
Banana Muffin Tops
These delicious banana muffin tops are a perfect grab-and-go breakfast or snack.
Ingredients
- Chocolate chips (1/2 cup)
- Chopped walnuts (1/2 cup)
- Cinnamon (1/2 teaspoon)
- Salt (1/4 teaspoon)
- Baking soda (1/2 teaspoon)
- Baking powder (1 teaspoon)
- All (purpose flour - 1 1/2 cups)
- Vanilla extract (1 teaspoon)
- Egg (1)
- Granulated sugar (1/2 cup)
- Unsalted butter (1/2 cup, melted)
- Ripe bananas (2)
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas with a fork.
- Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Fold in the chopped walnuts and chocolate chips.
- Drop spoonfuls of the batter onto the prepared baking sheet, forming muffin tops.
- Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffin tops to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
