
Banana Muffins
These moist and delicious banana muffins are perfect for breakfast or as a snack.
Ingredients
- Chopped walnuts (1/2 cup)
- Nutmeg (1/4 teaspoon)
- Cinnamon (1/2 teaspoon)
- Vanilla extract (1 teaspoon)
- Salt (1/4 teaspoon)
- Baking soda (1/2 teaspoon)
- Baking powder (1 teaspoon)
- Egg (1)
- Unsalted butter (1/3 cup, melted)
- Granulated sugar (1/2 cup)
- All (purpose flour - 1 1/2 cups)
- Ripe bananas (3)
Instructions
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas with a fork.
- Add the melted butter, egg, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add the dry ingredients to the banana mixture and stir until just combined. Do not overmix.
- Fold in the chopped walnuts.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
