Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, crushed bran flakes, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix together the mashed bananas, brown sugar, egg, milk, vegetable oil, and vanilla extract until smooth and well blended.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix to keep the muffins light and fluffy.
  5. Carefully fold in the chopped walnuts, ensuring they are evenly distributed throughout the batter.
  6. Divide the muffin batter evenly among the prepared muffin cups, filling each about three-quarters full.
