Servings: 12
Ingredients
- All-purpose flour
- 1 1/2 cups
- Baking powder
- 1 teaspoon
- Baking soda
- 1/2 teaspoon
- Salt
- 1/4 teaspoon
- Ripe bananas
- 3, mashed
- Unsalted butter
- 1/2 cup, melted
- Granulated sugar
- 1/2 cup
- Brown sugar
- 1/4 cup
- Egg
- 1
- Vanilla extract
- 1 teaspoon
- Chopped walnuts
- 1/2 cup
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners for easy removal.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. This mixture forms the dry base of your muffins.
- In another bowl, combine the mashed bananas, melted unsalted butter, granulated sugar, brown sugar, egg, and vanilla extract. This forms the wet mixture.
- Gradually pour the wet banana mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix as it can make the muffins tough.
- Fold in the chopped walnuts, distributing them evenly throughout the batter for a delightful crunch in every bite.
- Evenly distribute the batter among the muffin cups, filling each about 3/4 full to allow for expansion during baking.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes. This makes them easier to remove. Then, transfer them to a wire rack to cool completely. Enjoy your homemade Banana Nut Muffins!
