Serves 4

Ingredients

Ripe bananas
2, medium
Rolled oats
1 1/2 cups
Milk
1 cup (or dairy-free alternative)
Egg
1, large
Vanilla extract
1 teaspoon
Cinnamon
1 teaspoon
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Maple syrup
2 tablespoons (plus more for serving)
Greek yogurt
1 cup (for serving)
Fresh berries
1 cup (for serving, such as strawberries, blueberries, or raspberries)

Instructions

  1. In a blender, combine the ripe bananas, rolled oats, milk, egg, vanilla extract, cinnamon, baking powder, salt, and maple syrup. Blend on high until smooth and creamy, scraping down the sides if necessary.
  2. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray or a small amount of oil.
  3. Pour about 1/2 cup of the batter onto the preheated waffle iron for each waffle. Close the lid and cook until the waffles are golden brown and crispy, usually about 4-5 minutes, depending on your waffle iron.
  4. Carefully remove the waffles and serve immediately topped with a dollop of Greek yogurt, fresh berries, and an extra drizzle of maple syrup.
  5. Enjoy your delicious Banana Oat Waffles warm!

Tips

  • 💡 For added flavor, consider mixing in a handful of chopped nuts or chocolate chips to the batter.
  • 💡 If you're looking for a gluten-free option, ensure your oats are certified gluten-free.
  • 💡 These waffles freeze well! Make a big batch and store them in the freezer. Reheat them in the toaster for a quick breakfast.
