Caramelized Banana Tart

Ingredients
- Brown sugar
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Heavy cream
- 1/2 cup
- Lemon juice
- 1 tablespoon
- Ripe bananas
- 4
- Egg yolks
- 2
- Salt
- 1/4 teaspoon
- Granulated sugar
- 1/4 cup
- Unsalted butter
- 1/2 cup, cold and cubed
- All-purpose flour
- 1 1/2 cups
Instructions
- In a food processor, combine the all-purpose flour, unsalted butter, granulated sugar, and salt. Pulse the mixture until it forms coarse crumbs.
- Add the egg yolks to the food processor and pulse until the dough starts to come together.
- Transfer the dough onto a lightly floured surface and shape it into a disk. Wrap the dough in plastic wrap and refrigerate for 30 minutes until it's firm.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a lightly floured surface until it's large enough to fit a 9-inch tart pan. Press it into the pan, trim any excess dough, and prick the bottom of the crust with a fork.
- Bake the crust for 10 minutes, or until it's lightly golden.
- Meanwhile, slice 2 of the bananas and toss them with the lemon juice to prevent them from browning.
- In a separate bowl, mash the remaining 2 bananas. Add the heavy cream, vanilla extract, and brown sugar to the mashed bananas, mixing until well combined.
- Spread the mashed banana mixture over the pre-baked crust, and arrange the lemon-soaked banana slices on top.
