Servings: 4

Ingredients

Bread slices
8 slices (preferably brioche or challah)
Eggs
4 large
Milk
1 cup (whole or 2% for creaminess)
Vanilla extract
2 teaspoons
Cinnamon
1 teaspoon
Brown sugar
1/4 cup (for caramelizing bananas)
Butter
4 tablespoons (divided for cooking and caramelizing)
Bananas
4 large, sliced
Maple syrup
1/2 cup (for drizzling)
Powdered sugar
for dusting

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Add the sliced bananas, 1/4 cup brown sugar, cinnamon, and 1 teaspoon of vanilla extract to the skillet. Cook until the bananas are caramelized and the sugar has melted, stirring gently, about 3-4 minutes. Remove the skillet from heat and set aside.
  3. In a shallow dish, whisk together the eggs, milk, remaining 1 teaspoon of vanilla extract, and a pinch of salt until well combined.
  4. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side to absorb maximum flavor.
  5. Heat a non-stick skillet or griddle over medium heat. Add a tablespoon of butter if necessary to prevent sticking. Cook the soaked bread slices until golden brown and crispy on each side, about 2-3 minutes per side.
  6. To serve, pile the warm French toast on plates and generously top with the caramelized bananas. Drizzle with maple syrup and dust with powdered sugar for an extra touch of sweetness.
  7. For added flavor, consider adding chopped pecans or walnuts as a topping, or serve with a dollop of whipped cream.
