Grilled Bangus (Filipino Marinated Milkfish)

Ingredients
- 1 large, cleaned and scaled Bangus (milkfish)
- As needed, for grilling Cooking oil
- 1 teaspoon, or to taste Salt
- 1/2 teaspoon, or to taste Black pepper
- 1 tablespoon, freshly grated Ginger
- 3 cloves, minced Garlic
- 1/4 cup Calamansi juice
- 1/2 cup Soy sauce

Instructions
- In a bowl, combine the soy sauce, calamansi juice, minced garlic, grated ginger, black pepper, and salt to create the marinade.
- Lay the cleaned and scaled bangus in a shallow dish. Pour the marinade over it, ensuring that the fish is thoroughly coated. Let the fish marinate for at least 1 hour, or preferably overnight in the refrigerator for maximum flavor absorption.
- When you are ready to cook, preheat the grill to medium-high heat.
- Brush the grill grates thoroughly with cooking oil. This will prevent the fish from sticking during the grilling process.
- Place the marinated bangus on the grill. Cook for approximately 7-8 minutes on each side, or until the fish is cooked through and displays a nice char. The fish should flake easily with a fork when it's done.
- Carefully remove the bangus from the grill. Serve hot alongside steamed rice and your preferred dipping sauce.
