Ingredients

Original recipe serves 4

Bangus (milkfish)
1 large, cleaned and scaled
Cooking oil
as needed, for grilling
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste
Ginger
1 tablespoon, freshly grated
Garlic
3 cloves, minced
Calamansi juice
1/4 cup
Soy sauce
1/2 cup

Instructions

  1. In a bowl, combine the soy sauce, calamansi juice, minced garlic, grated ginger, black pepper, and salt to create the marinade.
  2. Lay the cleaned and scaled bangus in a shallow dish. Pour the marinade over it, ensuring that the fish is thoroughly coated. Let the fish marinate for at least 1 hour, or preferably overnight in the refrigerator for maximum flavor absorption.
  3. When you are ready to cook, preheat the grill to medium-high heat.
  4. Brush the grill grates thoroughly with cooking oil. This will prevent the fish from sticking during the grilling process.
  5. Place the marinated bangus on the grill. Cook for approximately 7-8 minutes on each side, or until the fish is cooked through and displays a nice char. The fish should flake easily with a fork when it's done.
  6. Carefully remove the bangus from the grill. Serve hot alongside steamed rice and your preferred dipping sauce.
