  • Pandan extract (2 teaspoons)
  • Water (1/2 cup)
  • Vegetable oil (2 tablespoons (plus extra for greasing))
  • Salt (1/4 teaspoon)
  • Vanilla extract (1 teaspoon)

Instructions

  1. In a large mixing bowl, combine the rice flour, tapioca starch, sugar, and baking powder. Whisk together until well combined.
  2. In a separate bowl, mix together the coconut milk, pandan extract, water, vegetable oil, vanilla extract, and salt. Stir until the mixture is smooth and well blended.
  3. Gradually pour the wet mixture into the dry mixture, stirring continuously until you achieve a lump-free batter.
