  • Black pepper (to taste)
  • Fish sauce (2 tablespoons)
  • Green onions (3, finely chopped)
  • Wood ear mushrooms (1 cup, finely chopped)
  • Shrimp (1 cup, peeled and deveined)
  • Ground pork (1 cup)
  • Cooking oil (2 tablespoons)
  • Salt (1 teaspoon)
  • Water (2 cups)
  • Rice flour (1 cup)

Instructions

  1. In a large bowl, combine the rice flour, water, and salt, mixing until a smooth batter forms.
  2. Heat a non-stick pan over medium heat and add a tablespoon of cooking oil.
  3. Pour a ladleful of the batter into the pan, spreading it evenly to create a thin pancake. Cook for 2-3 minutes until set and lightly golden.
  4. Repeat the process with the remaining batter, adding more oil as needed until all pancakes are cooked.
  5. In a separate pan, heat the remaining oil over medium heat. Add the ground pork, cooking until browned and fully cooked.
  6. Add the shrimp, wood ear mushrooms, and half of the green onions to the pan, cooking for an additional 2-3 minutes until the shrimp are pink and the mushrooms are tender.
  7. Season the mixture with fish sauce and black pepper to taste, stirring well to combine.
  8. To serve, cut the Banh Duc pancakes into bite-sized pieces and top with the savory pork and shrimp mixture. Garnish with the remaining green onions.
