Ingredients

Sticky rice flour
1 cup
Sugar
1/3 cup
Coconut milk
1/2 cup
Water
1/2 cup
Salt
1/4 teaspoon
Mung beans
1 cup, soaked and cooked
Screwpine leaves
10-12 leaves, cleaned and trimmed

Instructions

  1. In a mixing bowl, combine the sticky rice flour, sugar, coconut milk, water, and salt. Mix well until a smooth batter forms. Adjust the water if necessary to achieve the right consistency.
  2. Divide the batter into small portions (about 2 tablespoons each) and flatten each portion into a disc shape with your palms.
  3. Take a cooked mung bean (about 1 tablespoon) and place it in the center of the disc. Carefully wrap the edges of the disc around the filling, forming a small dumpling.
  4. Take a screwpine leaf, place the dumpling in the center, and fold the leaf around it securely to create a package. You can use a toothpick to secure the leaves if necessary.
  5. Repeat the process until all the batter and filling are used.
  6. Arrange the wrapped dumplings in a steamer basket lined with a cloth or parchment paper to prevent sticking.
  7. Steam the dumplings for about 30 minutes, or until the sticky rice is cooked and the filling is soft.
  8. Carefully remove the dumplings from the steamer and let them cool slightly before serving.
